Dakkalbi (Korean Spicy Chicken)

Ingredients


2 Tbsp gochujang
Dash of black pepper
1 Tbsp gochugaru
1 Tbsp soysauce
1 Tbsp honey
1 Tbsp sesame oil
1 Tbsp mirin
1/4 curry block
1 Tsp garlic

Chicken thigh
Cabbage
Onion
Perilla leaves
Dduk (ricecakes)
Korean sweet potato
Scallions

  1. On a cutting board, place the chicken between two pieces of paper towel and press with your hands to dry it out

  2. After the chicken has been dried, cut it into thin slices

  3. Add the chicken to a bowl with the gochujang, gochugaru, black pepper, soysauce, honey, sesame oil, mirin, curry block, and garlic

  4. Use your hand (protected with a plastic glove) to mix everything together and marinate the chicken

  5. Using a clean cutting board, cut the cabbage, onion, scallions, perilla leaves, and sweet potato into bite-sized pieces (you can cook everything at once, but I prefer to boil the sweet potato in a pot with water separately)

  6. Add some oil to a heated pan and stir-fry the marinated chicken first

  7. Add the cooked sweet potatoes, dduk (ricecakes), and a little bit of water to the pan and stir-fry on high heat for 5 minutes

  8. After the 5 minutes is up, add the cabbage, onions, scallions, and perilla leaves (add these last!)

  9. Stir everything until it's evenly cooked, and enjoy!
