Pork mushroom wrap
hi hi i I’m so excited to share this simple recipe with you :)
I’m so happy about how the food and video turned out. enoki mushrooms have been hard to find since the recall (make sure you wash them well and cook them fully before eating! cooking on high heat kills potential listeria), but as soon as I found them again, I knew in my heart what to make. can you imagine? just me with my bag of mushrooms, all giddy on my way home to cook. these moments are small but I like to think you collect them like pebbles… and they count, when you look back. Anyways, the joy has been all the more amplified because now I get to share it with you. Hope you enjoy.
here's the recipe.
Ingredients
sauce
3 Tbsp water
2 Tbsp soysauce
1 Tbsp sugar
1 Tbsp mirin
dash of black pepper
1/2 Tbsp cornstarch
1 tsp grated ginger
Wrap
5 pieces of thin sliced pork (hmart or asian supermarket!)
Handful of enoki mushrooms
1 tsp sugar
For the sauce, mix everything, and boil while stirring until the sauce thickens. (It helps to mix the cornstarch first in water)
Wrap a small pinch of enoki mushrooms in pork
on a heated oiled pan, place the wrap so that the meat ends face the pan. Sprinkle some sugar.
Cook each side evenly. Wipe some of the extra grease with a paper towel.
Now brush the sauce over the wraps, and reduce it in low heat. Flip the wraps carefully and brush the sauce on all sides.
Enjoy with rice :)
Mix and boil the following
3 Tbsp water
2 Tbsp soysauce
1 Tbsp sugar
1 Tbsp mirin
dash of black pepper
1/2 Tbsp cornstarch
1 tsp grated ginger
if you want to avoid lumps, mix the cornstarch with water first, and then add to the mixture
when it starts to simmer, it’ll thicken up. let it cool on the side.

I topped my rice with some sesame oil and grilled onions and scallions.
