Soondubu (spicy tofu stew)


Soon-dubu • There is an old saying in Korean that we like to beat the summer with something even hotter🔥 Well here is that something to beat the heat. I didn’t actually think that homemade Soondubu will turn out this good, even without the meat. You guys have to trust me and try. Here is the recipe, adapted from the Korean recipe hub, 10000 Recipe.

The BEST Soondubu recipe (for one)

Ingredients

  • 2 servings

  • 1 container Silken tofu

  • 1 scallion,

  • 1/4 onion

  • 1/4 Zucchini (or Korean squash) // OR, potatoes

  • 1/4 jalapeno pepper

  • 1 egg

  • 1.5 cup water

  • 1 Tbsp sesame oil

  • 2 Tbsp vegetable oil

  • 1 Tbsp Gochugaru (or more, if you like spicy)

  • Salt to taste

  • 1 tsp sugar

  • 1 Tbsp oyster sauce

  • 1 Tbsp soy sauce

  • 1 Tbsp minced garlic

  • 1 tsp dashi powder (or, optional, the clam tablet)

  1. Chop up your scallion, onion, pepper (smaller pieces), squash into bite size

  2. In the bottom of an empty pot, add sesame oil and vegetable oil

  3. Add scallion and onion and cook until fragrant in medium heat (if you want to add meat, this is where you add pork or beef and pan fry)

  4. Add 1-1.5Tbsp gochugaru (depends on how spicy you want it) and fry until infused in the oil. mix in sugar, oyster sauce, soysauce

  5. Then add 1.5 cup water**

for a deeper flavor, you can add 2 cups of anchovy broth (+mushroom, dashi if you have) boiled in advance.

for an even richer flavor, add the clam tablet.

  1. Now bring to full boil, then add the squash (or potatoes), garlic, and pepper

  2. Add the silken tofu in the end and boil 3 minutes.

  3. Turn off heat and add egg, then serve when the egg is almost poached.

The oil will look bright red, and you’ll be able to smell the spices cooking.

Add 1.5 cup of water, bring to a boil.

for a deeper flavor, you can add 2 cups of anchovy broth (+mushroom, dashi if you have) boiled in advance.

Add the chopped squash

Add chopped jalapeno peppers, and half a teaspoon of minced garlic.

Add.1 container of silken tofu, and bring to a boil with the lid on 4-5 minutes.

Crack an egg, turn off the heat, and close the lid for 3 minutes.
