Slinky Cucumber
Ingredients (1 serving)
4 persian mini cucumbers
2 tsp salt
2 cutting boards / 2 chopsticks
Sauce
2 Tbsp Peanut Butter
1 Tbsp sesame oil
2 Tbsp soy sauce
1 Tbsp chili oil (or Sriracha, hot sauce of your choice)
1 tsp sugar
dash of vinegar
place the cucumber between 2 cutting boards (1/2 inch in thickness) or 2 chopsticks, and slice the cucumber into horizontal slices (like a hasselback potato)
flip the cucumber to the opposite side, then slice in a 45 degree angle (see video here). the cucumber will turn into a slinky!
be careful not to cut too much, not leaving enough structure to hold the cucumber together!
(optional) to make your cucumber extra crispy, salt the cucumbers and leave for 30 minutes to draw out the water. rinse the water and dry the cucumbers
Mix the sauce ingredients: 2 Tbsp Peanut Butter, 1 Tbsp sesame oil, 2 Tbsp soy sauce, 1 Tbsp chili oil (or Sriracha, hot sauce of your choice), 1 tsp sugar, and a dash of vinegar
brush the sauce over the cucumber, and enjoy right away!
