Gyeran-Jjim (Korean Steamed Eggs)
Gyeran-jjim, also known as Korean steamed egg, is a simple and flavorful dish that's perfect for breakfast, lunch or dinner. **for this recipe, you will need a ttukbaegi, which is a traditional Korean pot
In a blender, add the eggs, salt, sugar, mirin, baking powder, and water (blend everything for about 5 seconds or you can also use a whisk)
Pour the egg mixture into the ttukbaegi
On a cutting board, dice the carrots and chives into small pieces and add them to the ttukbaegi (sprinkled on top of the egg mixture)
On the stove, cook the ttukbaegi on high heat while continuously stirring
When the eggs start to lump, stop stirring the mixture and sprinkle more carrots on top
Cover the top of the ttukbaegi with the lid (or a big bowl) leaving enough room for the eggs to rise
Let the eggs rise for 3 minutes under low heat, and enjoy!
