Ricotta Cheese
Taken from The Food Lab book
Ingredients (makes enough for just 1 toast)
1 cup of milk,
1 Tbsp of distilled vinegar.
And a pinch of salt.
Mix everything
Microwave 4 minutes
use a cheese cloth, or kitchen towels, then drain the water from the cheese!
don’t touch, let it sit for at least 10-15 minutes. 10 minutes gives you creamy ricotta, 15 minutes will give you a more solid texture.
spread it over toast with honey, olive oil, and toasted nuts. (get creative!)
