Croque Madame

For the béchamel sauce, on low heat melt 2 Tbsp butter, then add 2 Tbsp flour. Cook on medium heat while stirring. it’ll turn thick. Then add 1 cup milk. cook 10 minutes while stirring, and it’ll thicken even more. Add the grated parm cheese and parsley and keep stirring! Done.
While making the sauce, toast some bread, ham, and fry 1 egg sunny side up.
mix béchamel with some mozzarella (save some for topping). Also optional. use guyere if you have.
Assemble! Pile up the bread, béchamel, ham, with some more béchamel. add sweet potato salad on top of the ham if you have some leftover.
Top it with mozzarella, and broil for 2 minutes
Add the cherry on top = sunny side egg. Enjoy!
