Whole Orange Almond Cake

Adapted from the James Beard Foundation

Ingredients

  • 1 whole orange

  • 1 cup almond flour (or ground almonds)

  • 1/2 cup sugar

  • 3 eggs

  • 1/2 tsp baking powder 

  1. Boil the orange for 30 min.

  2. In the meantime, beat eggs, sugar, baking powder.

  3. Fish out the orange, cut it in small pieces with the peel, remove seeds, and puree it in a blender

  4. Add almond flour, orange puree, mix & Bake for 45 minutes at 400ยฐF (check regularly cuz it depends on your pan)

  5. I put fig jam and strawberries between the cake layers,

  6. And topped it with chia seed pudding with orange zest right before serving (to myself). Enjoy!!

wash the orange clean

and boil it for 30 minutes. this will get the bitter taste out of the peel.

when the orange is boiled, cut into small pieces, remove the seeds (if there are any) and puree in a blender.

Add almond flour, orange puree, mix

Bake for 45 minutes at 400ยฐF (check regularly starting at 30 min cuz it depends on your pan)

when a toothpick comes out clean, youโ€™re good to go.

cool the cake layers, and dress the cake with jam and strawberries

(I used fig jam)

top it off with the top layer,

Serve with Chia Pudding right before serving.

garnish with a thin slice of tangerine or orange, and a mint leaf.
