Busut-Jeon (Mushroom Fritters)

Ingredients

1 Tbsp soysauce
1 Tsp sugar
1 Tsp sesame oil
Dash of black pepper
1 Tsp minced garlic

Mushroom variety: oyster, king oyster, enoki
White vinegar
Bowl of water
Oil (for frying)
1 Tbsp cornstarch
1 Tbsp flour
1 egg

Scallions, for garnish

  1. In a bowl, wash the mushrooms in vinegar water

  2. Dry the mushrooms with a paper towel and chop them into thin slices

  3. In a bowl, mix together the mushrooms, soysauce, sugar, sesame oil, black pepper, and minced garlic

  4. Stir in the cornstarch, flour, egg, and scallions and mix well

  5. On a heated pan with oil, place small amounts of the mushroom mixture into a pan

  6. Fry the pancakes until they’re golden brown (making sure to flip them on both sides), and enjoy!
