Hobakjeon (Korean Squash Side Dish)

Ingredients

Dash of salt

Oil (for frying)
Ae-hobak (Korean squash)
1 egg

  1. On a cutting board, slice the squash into circles (about 1/2 inch thick)

  2. Cut the circles in half again (so every piece is a semicircle)

  3. Add an egg and a dash of salt to a bowl, and whisk until smooth

  4. Dip the squash pieces into the egg mixture and coat them evenly

  5. In a heated pan with oil, lay the squash pieces into the pan one by one

  6. Flip the pieces over when they’re golden brown, and enjoy!
