Bossam

Ingredients

  • 2-3 Tbsp of doenjang

  • 1 onion

  • 4 cloves of garlic

  • 2 leeks

  • scallion

  • 1 jalapeno or serrano pepper

  • 1lb whole, uncut piece of pork belly / shoulder

  • Oil (for pan frying)

  • lettuce wrap




  1. On a cutting board, chop up the onion, leeks, and scallion Peel the garlic and leave it in large chunks

  2. Drizzle some oil into a heated pan Add the pork belly / shoulder to the pan and sear it on all sides

  3. Remove the pork from the pan and put it on a plate Rub the pork with the doenjang until all of the sides are covered

  4. Drizzle some more oil into the heated pan and stack your veggies inside from largest to smallest (onions on the bottom, leeks, garlic, and scallion on top)

  5. Place the pork in the pan on top of the veggies Sprinkle more garlic chunks and add jalapeno or serrano pepper to the pan

  6. Cover the pan and cook on low heat for 45 minutes (the moisture from the veggies will steam into the pork!)

  7. Remove the pork from the pan and cut it in the middle to check if it's cooked through

  8. Slice up the pork, wrap it in a ssam (lettuce wrap), and enjoy!
