Soojung Gwa (Korean Cinnamon Tea)

Soojung gwa is a traditional Korean drink that's perfect for sipping on a chilly day or after a meal. Ingredients

Thumb-sized piece of ginger
Stick of cinnamon
4 Tbsp brown sugar

5 cups of water

  1. On a cutting board, cut the ginger into thin slices

  2. In a pot, bring 1 cup of water to a boil and add the ginger slices

  3. Boil the water and ginger on high heat for ~5 minutes

  4. Add in the remaining 4 cups of water and the cinnamon stick, and simmer on low heat for 20 minutes

  5. After 20 minutes, strain the tea in a sieve (or remove the ginger pieces and cinnamon stick)

  6. Add 4 Tbsp of brown sugar to the tea and mix it well

  7. Enjoy!
